Carbonara


You need:

1 egg yoke
300 ml single cream
250g parmigiana cheese
Lemon
2 garlic cloves
Pancetta chunks
Fresh Basil
5/6 sausages
Tagliatelle pasta

How to cook!
1. Squeeze the sausage meat out of the skin into round balls the same size and crush the garlic cloves.
2. Fry the sausage meat, pancetta, and garlic in olive oil.
3. Boil water and add the tagliatelle whilst the sausage etc is frying ( season with salt)
4. make the sauce: add the grated cheese, egg yoke, and single cream into a bowl and mix. squeeze lemon and mix.
5. Once cooked, add the tagliatelle and sauce to the meat and let simmer for a couple of minutes until hot. Sprinkle fresh basil on top.

French Onion Soup


Very filling and very yummy. Good for a cold winters day although be careful not to burn your tongue.  Easy to make but it takes a long time, it is worth it though. Enjoy :)

You Need (serves 4):

6 Large Onions
Olive Oil
Garlic Clove
2 Beef steaks
2 Beef Stock Cubes
1/4 teaspoon of sugar
1/4 teaspoon of thyme

How to Cook:

1.  Cover bottom of saucepan with olive oil
2.  Add chopped onions to pan and saute until onions start to caramelise (30-40 mins)
3.  Add sugar 10 minutes into the process.
4.  Add garlic, beef stock and thyme
5.  Cover pot and Simmer for 30 mins
6.  Serve - for best results serve with homemade croutons (fry bread in oil) and a little cheese.

Sausage Casserole

This sausage casserole is mainly left to cook on its own. Very easy and simple should you need to other things whilst cooking it. Hope you enjoy :)


You Need:

8 Sausages
3 Small Onions
1 Packet of Sausage Casserole Recipe Mix
3/4 Pint Water
175g Mushrooms (optional)

Serve with mashed potato and green cabbage or green beans.

How to Cook:

1.  Pre-heat oven to 180c/gas mark 4
2.  Fry the sausages until brown and drain.
3.  Add chopped onions and cook for 3-4 mins until onion is soft.
4.  Transfer all to oven proof dish.
5.  Blend Packet Mix with the water. Add to dish.
6.  Add mushrooms if using.
7.  Stir thoroughly.
8.  Cover and cook for 1 hour.
9.  Serve with mash potato and green cabbage or green beans.

Toad in the Hole


Toad in the Hole is my (Hannah's) favourite meal and is so cheap and easy to make.

You need (serves 4):

8 Sausages
225g Plain Flour
4 Eggs
250ml Milk

How to cook:

1.  Pre-heat oven to 200c/gas mark 6
2.  Oil baking tray/glass dish
3.  Arrange and pierce sausages in a single layer.
4.  Bake for 10 mins
5.  Whisk (needs to be really well whisked) flour, egss and milk
7.  Pour the batter onto sausage until 3/4 covered.
8.  Return dish to the oven.
9.  Bake for 35 mins (or until centre is risen and brown).

Try this with Onion Gravy (fry onions until browning then add to gravy) for best taste.
